Passover Granola

Snacking during Passover can be challenging. One tasty way to take the edge off is with this delectable version of Passover-friendly granola. Like regular granola, it works with yogurt, as dessert (or with ice cream), and as a snack. It is very easy to make and is honestly good enough that I am happy to snack on it whenever I have some around. And, should you have leftovers, or want to make it in advance, it freezes well.

This recipe came to me from some family friends almost 20 years ago and I have updated it to a maple-based (not honey-based) treat. I kept the original almonds, but next time I will add walnuts and/or pecans as I think those nuts work especially well with maple (but the almonds are excellent). As with all granola recipes, you can modify this to your heart's content.

Whether you are hosting a Seder, attending a seder (this makes a great hostess gift!), or just like to snack on granola, give this a try.
