
Passover Granola

Sweet and crunchy, this recipe is a delicious snack, a wonderful house gift, and works for breakfast and dessert, too!

Ingredients
2.5 cups farfel
1 cup almond slivers (or walnuts or pecans, or a mix)
2.5 tbsp. butter (or margarine, if you want it to be pareve)
1/4 cup brown sugar
1/4 cup pure maple syrup (the darker the better); do not use imitation syrup!
1/2 cup raisins
Preparation
Preheat oven to 325.
Combine farfel and nuts in a medium sized bowl. Spread mixture on a lightly greased cookie sheet or sheet pan lined with non-stick foil.
Bake 15-20 minutes, tossing several times, until mixture is lightly toasted.
In a 2-quart saucepan, combine butter (or margarine), brown sugar and syrup. Bring to a simmer for a few minutes, stirring constantly. Remove from heat.
Add lightly toasted farfel-nut mixture to syrup mixture. Mix well until everything is well coated.
Spread coated granola on cookie sheet. Increase heat to 350. Bake additional 15-20 minutes, until golden brown, stirring frequently. (Watch carefully -- mixture burns easily). Remove from oven.
Put granola in large bowl. Stir in raisins. Break up large lumps.
Cool thoroughly and store in airtight container.
