Cilantro Lime Shrimp: Easy, Quick, & Healthy!

What's for dinner is a struggle I think we all contend with from time to time (or regularly). My cilantro lime shrimp is a family favorite which makes its way into the rotation whenever I happen to have extra cilantro on-hand. (I always have shrimp in the freezer, garlic in the pantry, and limes in the fridge).
What makes this so great? Well, it's DELICIOUS, super-easy, very quick, and super healthy! Add par-cooked or leftover rice and some veggies, and you're all set! If you purchase (frozen) peeled and de-veined shrimp at the market, that will make this dish even easier as you won't need to peel and de-vein the shrimp yourself! One word of note: you definitely want to use FRESH (not jarred) lime juice; trust me.
Should there be leftovers, it is amazing on a salad or in a tortilla wrap/ quesadilla/ tostada.
