Cilantro Lime Shrimp

Simple, Quick, Healthy, & Delicious; it's kind of a perfect dish.

Ingredients

  • 1½ pounds peeled and de-veined shrimp

  • ¼ tsp plus 1/8 tsp ground cumin

  • Kosher salt and freshly ground black pepper

  • 2 tsp extra-virgin olive oil

  • 5 garlic cloves, crushed, minced, grated, or finely chopped

  • 2 tbsp fresh lime juice (from 1 medium lime)

  • 3-4 tbsp chopped fresh cilantro

Preparation

  1. Season the shrimp with cumin, salt and pepper.


  2. Heat a large nonstick skillet over medium-high heat. 

    1. IF ALL YOUR SHRIMP DOES NOT FIT COMFORTABLY IN YOUR PAN: Add 1 tsp oil to pan, then add half the shrimp.  Cook them undisturbed for about 2 minutes.  Turn the shrimp over and cook until opaque throughout, about 1 minute.  Transfer to a plate. Add the other teaspoon of olive oil and the remaining shrimp to the pan and cook, undisturbed, for 2 minutes. Turn the shrimp over, and [go to step 3].


    2. IF ALL YOUR SHRIMP DOES FIT IN YOUR PAN (WITHOUT CROWDING): Add the olive oil to your pan and cook undisturbed for about 2 minutes. Turn the shrimp over.


  3. Immediately add the garlic, and cook this side of the shrimp until it is opaque throughout, about a minute. [Add reserved shrimp if appropriate now and] Mix the garlic so that it is evenly incorporated into the shrimp. Remove the pan from the heat.


  4. Squeeze the lime juice over all the shrimp.  Add the cilantro, toss well, and serve.
