The Sweet Potato & Black Bean Burrito Recipe You've Been Waiting For

If you're vegetarian or just want to make something vegetarian, this is a great go-to recipe. These burritos are filling, can be prepped ahead of time, and are adaptable (can be made vegan or more/less spicy). I got this recipe from a friend (who got it from a friend) so cannot give credit where credit is due, but I have also made a few tweaks as well.
While the recipe as written isn't what I consider spicy, feel free to cut down, skip, or double the jalapenos, depending on your tastes. To make it vegan, just skip the cheese -- or add vegan cheese if it melts (I don't know anything about that).
This is great in general, but it is also good if you are having folks over and don't want to slave in the kitchen. The burritos can be prepped in advance (a few days, even), and then just popped in the oven to heat (although cooking time may take longer if they are coming from the fridge). Add as much or as little cheese as you like, and serve with sour cream, salsa, guac, whatever. Leftovers can be easily nuked/ reheated without any issues.
