An Easy & Addictive Lemon Cookie

If you are looking for an easy and lemony cookie which freezes well (and is pretty darned good eaten straight from the freezer), have I've got the recipe for you! Aside from eggs, this recipe is made entirely with ingredients in your pantry -- meaning it requires very little forethought. And, should you have sprinkles or nonpareils to add on top, they can really look festive!
Back when I used to volunteer in the school library, I came upon these cookies made by another mom. Holy moly! I tried one and literally could not stop. I asked for and got the recipe (through the librarian), and have been making them ever since.
I have given a LOT of time trying to figure out what makes these cookies so addictive (at least for me), and I think it is actually the texture and perfect balance of sweet and tart. They are soft-ish, and among the cookies I make, this is pretty unusual. Perhaps this is because they are made with oil, not butter; I don't know. Plus, the lemon flavor comes from lemon extract, making their flavor consistent and not reliant upon the lemons you have available.
