
Addictive Lemon Cookies
Easy, delicious, and made almost entirely with pantry items, this is a delectable and addictive treat for anyone who likes lemon.

Ingredients
Cookies:
3 large eggs
½ cup sugar
½ teaspoon lemon extract
¼ cup + 2 tablespoons vegetable oil
2 cups flour
2 teaspoons baking powder
Icing:
1 cup confectioner’s sugar
2 drops of lemon extract
Water, as needed
Preparation
Cookies:
Preheat oven to 375°
In mixer with paddle attachment (or using a hand mixer), beat eggs slightly.
Add sugar, lemon extract, and oil, and beat until smooth and lemon-yellow in color.
Mix in flour and baking powder with mixer on low until fully incorporated. (Dough may be a little thin but thickens as it stands).
Place parchment on baking sheet (or use a silicone mat) and using a teaspoon (or small-ish ice cream scoop) drop dough onto sheet (about 15 per sheet).
Bake for 8-10 minutes – cookies should be still be white -- NOT be golden.
(Make icing while cookies are baking as you want to ice them while they are still warm.)
Icing:
Whisk together sugar and extract.
Add water gradually (in drops) until mixture is right for topping cookies. Taste and add more lemon extract if you want more lemon flavor.
Frost while cookies are still warm by spreading out the icing on the warm top of the cookies (on cooling rack over parchment since icing will drip down). Add sprinkles or nonpareils to make them more "exciting" looking, if desired.
