Banana Chocolate Chip Bread

Delicious, easy, and moist banana chocolate chip bread or muffins, or both!

Ingredients
½ cup butter, softened to room temperature (one stick)
1 cup sugar
2 eggs
Zest & juice of 1 orange
4 ripe bananas, coarsely mashed
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp nutmeg
¼ tsp ground ginger
1 cup chocolate chips
Preparation
1.     Preheat oven to 350 degrees. Grease and flour a 9x5 inch loaf pan (or 2 smaller ones, or if you want there to be muffins, line a cupcake tin with wrappers).

2.     In a large mixing bowl and using an electric mixer, cream butter and sugar together. Add eggs and beat until fluffy. Add orange zest, juice, and bananas, beating to combine.

3.     Add remaining dry ingredients except chocolate chips and beat just enough to incorporate completely. Then mix in the chocolate chips gently.

4.     Pour into prepared pan and bake for 1 hour or until a wooden toothpick inserted in the center of loaf comes out clean. If making smaller loaves, or muffins, just keep an eye on them -- when the top looks to be set, start checking for doneness with a toothpick. Remove pan from oven and allow to cool in the pan for 10 minutes. Invert onto a wire rack to complete cooling.
